1. The Science of Vacuum Sealing
Vacuum sealing works by eliminating oxygen, a key factor in food spoilage. Oxygen promotes the growth of aerobic bacteria (e.g., mold and yeast) and accelerates fat oxidation, leading to rancidity. By creating a low-oxygen environment, vacuum packaging inhibits these processes, preserving texture, flavor, and nutrients. However, this environment also favors anaerobic bacteria like *Clostridium botulinum* (the cause of botulism), which thrive in oxygen-free conditions. Thus, proper storage—such as refrigeration or freezing—is essential to mitigate risks.

2.Shelf Life of Vacuum-Sealed Foods by Category

A. Dry Goods and Nuts
Low-moisture foods like nuts, dried fruits, and grains benefit most from vacuum sealing. Stored in cool, dark environments, these items can last over 12 months due to limited microbial activity.  

B. Meat and Seafood
Raw meat: Vacuum-sealed raw meat lasts 1-2 weeks in the refrigerator and 6-12 months in the freezer.  
Cooked meat: Refrigerated cooked meat remains safe for 3-4 days, while frozen storage extends this to 2-6 months.  
Seafood: Raw fish should be consumed within 1-2 days if refrigerated, but freezing extends its shelf life to 6-12 months.

C. Prepared Foods (e.g., Deli Meals, Cooked Dishes)  
These high-moisture foods are prone to bacterial growth. Even when vacuum-sealed, they should be refrigerated and consumed within 3-4 days, or frozen for up to 2 weeks. In room-temperature conditions, their safety window drops to 4-7 days in cooler seasons and just 2-3 days in warm climates.  

D. Fruits and Vegetables  
Fresh produce, which undergoes respiration even after harvesting, is less suited to vacuum sealing. However, blanched or cooked vegetables can last 3-4 days in the fridge or 2-6 months frozen.  

Vacuum sealing is a popular preservation method that extends the shelf life of various foods by removing air, preventing oxidation, and slowing bacterial growth.
